Stuffed Peppers w/Shrimp

Easy and perfect for those days you are hungry or need to feed the family but don’t feel like a big production in making dinner, this is the perfect one!

4 bell peppers, halved & seeded

1.5 cups vegetable broth

2 tbs olive oil

2 cloves garlic, minced

1 medium sweet onion, chopped

3 jalapenos, minced

16 oz fresh wild shrimp, peeled, deveined & chopped

3/4 cup frozen orgainc sweet corn

1 tsp garlic powdersea salt & ground pepper to taste

3/4 cup breadcrumbshredded pepper jack cheese

Preheat oven to 425 F.  Pour 1/2 a cup of the broth into a 9 x 13″ baking dish.  Place the peppers in the dish and set aside.
In a large, deep skillet, heat the oil on medium high. Add the garlic, onion & jalapeno and saute for 2 minutes. 

Add the corn and shrimp and cook until shrimp is opaque.  Season with garlic powder, salt & pepper.  

Add the breadcrumb and rest of the broth and cook for an additional few minutes or until the broth is absorbed.  
Stuff each pepper half with the mixture and place them into the baking dish.  Bake for 35 minutes.  Remove dish from oven and top each pepper with cheese and bake for an additional 2 minutes, or until cheese has melted.

Pumpkin Donuts 

I am in love with pumpkin everything since one of my favorite food bloggers hipped me to Pumpkin desserts two years ago. So this would be perfect for morning and after school treats as well with coffee or tea or my favorite Almond Milk! Also perfect for fall and upcoming holidays!

1 ½ cups Gluten Free Flour½ cup beet sugar (you can use regular old cane sugar in place)

1 teaspoon baking powder½ teaspoon baking soda½ teaspoon salt

1 teaspoon cinnamon

½ teaspoon nutmeg

1/3 cup canned pumpkin

2 tablespoons vegetable oil

½ cup coconut milk

½ cup beet sugar

¼ cup coconut milk

2 tablespoons coconut oil

1 teaspoon maple extract pinch of salt finely chopped pecans if desired
Instructions

In a medium mixing bowl, combine all of the dry ingredients.In a small bowl, combine the wet ingredients and then add them to the dry ingredients. Mix well until you have a thick batter. I then spoon the batter into a Ziploc and snip off the corner to make a piping bag to handle the sticky batter.

Add the batter to a greased doughnut pan or mini doughnut baker.

Bake 8-10 minutes at 350 degrees in the oven or 5 in the mini doughnut baker.

While the doughnuts are baking, make the glaze.In a small saucepan, combine the sugar, coconut, coconut oil, maple and salt. Bring to a simmer and cook about 4 minutes. Remove from heat and let cool slightly.Dip the doughnuts in the glaze (up to twice!) and garnish with pecans if desired.

My Saturday: Farmers Market and School Shopping

I love getting up early of course grabbing me some coffee or tea and heading to the farmer’s market, smelling all the fresh fruits/veggies and purchasing a few goodies!

It was so beautiful out this morning not hot just yet that is why I always choose to go early to beat the Florida heat.

Here are a few of my favorite goodies!

I can’t wait to get these on the grill, I enjoy eating them fresh off the grill lightly seasoned or could be used in a salad, either way it will be devoured.

These I can eat as is but sometimes I either top them off with caramel or chocolate, rainier cherries!

Haven’t quite decided how I will prepare these but nothing like some good squash & pancetta or squash soufflé. Maybe I will just do it simple the way I was taught sliced, sauteed in butter topped with salt & pepper, simple goodness!

Honey at farmers market is pure goodness, I can’t keep enough of this in the house, I can always find a way to use honey!!!!

Now the last minute items I forgot to purchase last week, had me out today in pure chaos after leaving my peaceful trip to the farmers market.

I choose not to do tax exempt weekend because of what I encountered today.

So I definitely deserve wine later, lol!
